This goes against what most people believe about cooking, but America’s Test Kitchen is saying that it’s better to cook a steak that’s frozen than to cook a steak after it’s been thawed out. In side-by-side tests, the frozen steak was “hands down” better tasting than the thawed steak.

Weird, right? All that time spent thawing out frozen steaks is not just useless, it actually makes the steak worse. America's Test Kitchen discovered this revelation by cutting steaks in half and freezing them. One half was thawed before cooking, the other half stayed frozen. Both steaks were cooked the same way, seared for 90 seconds per side and thrown in an oven ’til they reached medium rare (50C).

What the chefs found was that the frozen steaks cooked better throughout, wasn’t overcooked around the edge like the thawed steak, lost less moisture and just tasted better.

Fresh is best, of course, but if you have a frozen steak in your freezer right now, don’t worry about thawing it out the next time you want steak. America's Test Kitchen explains how to handle frozen meat below.
